In this module, learners are reminded of the importance of health and safety and have opportunities to practise strategies for reading, listening to and understanding a wide range of written and graphical information, including signs and symbols, using equipment and understanding safety data sheets. The themes in this module support learners with the communication skills (reading, writing, speaking and listening) needed at work: understanding and following instructions, communicating with colleagues and members of the public, understanding workplace and training information. Catering Module 4: Food hygiene.

Food hygiene. This module covers skills required to complete the food safety and hygiene training and in particular looks at the reading and language issues that may arise. One of four modules support the teaching of Level 1 and Level 2 qualifications in Catering. The 4 modules do not supply a complete programme of learning. Catering Module 3: Fast food.

This module will help learners to develop some of the skills that will underpin their work in a fast food setting, e.g. customer service, teamwork, preparing food to company specifications, money. Catering Module 2: Food preparation and cooking.

This module gives learners the opportunity to practise numeracy and literacy skills that they will need in the kitchen, e.g. stock rotation, weighing ingredients, time and temperature, using equipment safely. One of four modules support the teaching of Level 1 and Level 2 qualifications in Catering. The 4 modules do not supply a complete programme of learning. Instead, aspects of the training that place a particular demand on literacy, language and numeracy skills have been prioritised.
